    I didn''t want to shell out a whole lotta cash for a new chef knife--I admit that I am pretty cheap. My brother told me I had to get a Global, but I was surprised at the amount of poor ratings, even when stacked next to cheaper knives. I read review after review, but want to donate my absolutely junky Chicago cutlery block of knives to a thrift store, so took the plunge.

    I was absolutely AMAZED at the cutting ability, especially since this appears kind of cheap. I have tried it on various vegetables, and been so happy. My 13 year old immediately cut her finger, not believing me it was sharp. I had also purchased an off brand case to protect the blade, and promptly cut myself the first time I opened the case to take it out. LOL.

    One flaw was the case has little rubber things to keep any knives from moving around and damaging the blade, and immediately this seems to have gotten stained or rubbed deeply by the rubber nubby thing. I can''t wash that mark off. Other than that--an excellent knife for the price.

    I was looking for a good economical chef knife to replace the pressed steel knife in our cheap set. Over and over reviews said Victorinox was the best bang for your buck. I had to hone the blade immediately and that should have told me to return it. But I got it usable sharpness and it did ok for about 2 cuttings. Since then I have had to hone it more than I cut with it. It is just as bad as any other pressed steel knife out there if not worse. I do like the handle and weight, but without a sharp edge it is useless. We are talking 10 minutes of honing to spend 30 seconds cutting something as soft as an onion. Unacceptable

    I''ve talked up how this knife cuts through everything so easily to my wife. I''m sure she was tired of me saying how sharp it was.

    She used it today for the first time... and cut herself right to the bone.

    For her safety, I''m strongly suggesting she doesn''t use the knife because she is so accident-prone.

    (She''s okay. We super-glued her finger.)

    Update: Wife didn''t listen. Cut herself again and took a chunk of her thumb off while cleaning it. Just a bandaid this time.

After a few quick runs across the ceramic rod it was pretty sharp. I was also surprised that the knife itself is fairly flexible. I was cutting some onions and the knife flexed enough for me not to get perfectly straight slices. I suppose this might be good to filet fish. Either way, I’m a little disappointed. Even though it’s a good price, I would probably spend a little more and get something different.

    I just always grab this knife, cause its the right size and weight. I adore it and have worked literally hundreds of hours with one of these in my hand. Easy to sharpen, and at a price point it doesn''t matter if your not great at sharpening yet.

    It''s Victorinox. I have a handful of these knives. This 7.5", the 8" which is taller, a 3.5" paring knife, a 4" utility knife. I love this brand.

    The reason for my repeated business is that it is a wonderful workhorse. It''s inexpensive but that doesn''t mean cheap. The handle is superb, especially when repeatedly cutting wet things like tomatoes it stays grippy and comfortable.

    The blade is flexible but resilient. It''s not the hardest steel and won''t compare to a $200 carbon steel knife, but it doesn''t need to. It takes an edge well and holds up for a decent amount of time. considering the price it, it''s phenomenal.

    Specific to the 7.5". It''s shorter, meaning from the heal to the top (not the tip) compared to the 8". This makes it useful for filleting fish. more making long but delicate cuts. I use it regularly to trim fat off big hunks of meat. It''s decent for chopping vegetables but I usually use 8" for that task.

    I have a set for myself. I''ve bought sets for my gf and family. It''s kinda my go-to brand.

    I like to think I''m a decent amateur chef: I do all the cooking in my household and have done so for over 20 years.

    This knife was purchased to be a replacement for an 8" standard chef''s knife that had gotten dull (I''ve only recently gotten into the delights of blade sharpening, and have sharped that one.) I use it every day, and have for over six months.

    You will notice a definite difference in size between this 7" and an 8" knife: this one is certainly smaller. But that means more control. I have enjoyed using this knife. It is sharp, easy to clean, and as it did not cost a fortune I can beat it up a bit by accident and not be horrified.

    The handle is of an odd-feeling but highly grippable material.

    This purchase has made me confident in a future buy of the 8" knife made by the same company. For the price, I doubt you''ll get a better bang for your buck.

Maybe I got the one that slipped through Quality Control because how this knife ever passed is beyond me. I can''t and won''t recommend this paperweight to anyone.

    *UPDATE: After months of use, I can get past the tomato issue. Slices through lots of other foods with ease. I just use a different knife for the tomatoes. Maybe I''m tomato slicing challenged, I really can''t explain it. Seriously. How using this knife I have trouble piercing the skin (different varieties, yes), but half a dozen other knives I use on them slice right through without any effort, let alone squishing of the tomato when slicing.
